If you can make it past my terrible pun, check out this article on io9 about Hampton Creek Foods, a San Francisco start-up working on BeyondEggs, an egg substitute made entirely from plant proteins. They’re positioning their product primarily to replace battery cage eggs in processed foods, since even the most well-meaning organic cage-free egg buyer can’t always avoid eggs from questionable sources. It’s really cool how the team has come up with several different compounds that each mimic different properties of eggs. It really highlights how amazing the egg is, and reaffirms the coolness of science. The article also has some EGGcellent comics in it. I’m leaving now…
